Cream of Broccoli Soup

If you like Broccoli and you need to find creative ways to make it, or if you're a vegetarian, here is a good recipe, like you'd find in restaurants. It is delicious and filling. Enjoy!

What you'll need:
4 table spoons of butter (1/4 cup)
2 onions (thinly sliced)
2 small potatoes (thinly sliced)
4 cups fresh chopped broccoli
3 cups chicken broth or boulion (optional, can substitute with water or mushroom boulion)
1/2 teaspoon salt
ground black pepper to taste
1 cup heavy cream

1. Melt butter in pan, do not brown. Add vegetables, toss to coat with butter. Put lid on pan and simmer very gently until vegetables become soft. Do not brown.

2. Add chicken/mushroom broth/boulion, bring to a boil, then simmer until vegetables are soft.

3. Put in blender and puree until smooth. Pour back into the pan, add salt, pepper and cream. Simmer gently. Do NOT boil or cream will curdle, until heated through.

When you serve, you can grate some cheese on top of it or without.
